Double Stuffed Potatoes

Double Stuffed Potatoes are one of my favorite appetizers among this planet. They are so yummy and in these little potatoes hold a ton of amazing flavors. Me and my mom get these all the time when we go out to eat so why not make your own at home. Here's how.

 First, You'll need 2 large Potatoes. It doesnt matter what type, just use your favorites
 Poke alot of holes using a fork
 Drizzle on some Olive oil and microwave for 12 minutes. Yes, They will sizzle ALOT. Make sure to use a microwave safe plate.
Remove from microwave. CAUTION- Potatoes will be very HOT!!! Just thought i should inform you in case you were not sure how HOT!!! they will be. Cut them in half
 Using a spoon, scoop out the inside of the potato into a bowl (we will be using this). Leave about a 1/4 inch of excess around the edges and the skin.
 This is what the scooped out potatoes look like.
 Pan fry 2 pieces of bacon or more depending on how much you like bacon. I would've done seven but we only had 2   :)
 My dog Ozzy, Sat and watched, hoping i would drop a morsel of food for him.
 Remember those potatoes we scooped out. Well know we will be using it for the inside. Smash them up with a fork like mashed potatoes.
 Add a huge tablespoon or 2 of sour cream to the potatoes
 This is what the bacon looks like so far. Really greasy HUH
 Add some salt and pepper to flavor.
 Now is the best part. THE CHEESE!!! I would suggest the whole bag but the potatoes would be swimming in it. How about some potatoes for you cheese!! OK we will only be using a large handful of cheddar and jack
 YUMM the bacon is done. Pat dry with some paper towels
 Cut or crumble the bacon into little pieces
 Add the bacon to the mixture
 Mix it all up. I know how tempting this may be but don't eat it out of the bowl and if you do make sure to make more.
 Stuff your potatoes to the rim with the potato, bacon and cheese mixture

 Place them on a cookie sheet, sprinkle on extra cheese and broil at 500 degrees for about 5 minutes
YAY were done! Time to eat everyone. You can also add scallions and butter to the mix for an extra UMPHH
